Hearty Vegetable Soup

One way to keep warm this winter is with a hearty soup.

Hearty vegetable soup. Yum!

I keep chicken stock in the pantry closet and use whatever vegetables I have on hand. Kitchen Basics brand has the lowest sodium (150mg) compared to other brands I’ve checked.

soupAnyone can make this. Start with the triumvirate of chopped onion, celery and carrots sautéed in olive oil. Add minced garlic.

Add the chicken stock; I dilute it with water. Add a can of diced tomatoes, diced Yukon gold potato, fresh string beans or broccoli florets, whatever you have. Maybe cannelini beans. Dash of freshly ground pepper.

(Notice that I don’t list quantity in this recipe? I’m not too good at measuring when I cook–only when I bake.)

Mmm, the aroma fills the house and makes you feel warm before even tasting it.

Grate fresh parmigiana reggiano cheese on top before serving.

Serve with toasted Tuscan bread and enjoy. Mangia!
